Yummy Chicken Tacos

From the episode: Southwestern Suppers

To warm the tortillas, wrap them in foil and heat in a 350-degree oven for 15 minutes. Top the tacos with shredded lettuce, grated cheese, diced avocado, tomato, and sour cream.

Serves 6.
Ingredients
3 tablespoons unsalted butter
4 garlic cloves , minced
2 teaspoons minced chipotle chiles in adobo sauce
1/2 cup orange juice
1 tablespoon Worcestershire sauce
3/4 cup chopped fresh cilantro leaves
4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 teaspoon yellow mustard
Salt and pepper
12 (6-inch) flour tortillas


1. POACH CHICKEN Melt butter in large skillet over medium-high heat. Add garlic and chipotle and cook until fragrant, about 30 seconds. Stir in orange juice, Worcestershire, and ½ cup cilantro and bring to boil. Add chicken and simmer, covered, over medium-low heat until meat registers 160 degrees, 10 to 15 minutes, flipping chicken halfway through cooking. Transfer to plate and tent with foil.

2. SHRED AND SAUCE Increase heat to medium-high and cook until liquid is reduced to ¼ cup, about 5 minutes. Off heat, whisk in mustard. Using 2 forks, shred chicken into bite-sized pieces and return to skillet. Add remaining cilantro to skillet and toss until well combined. Season with salt and pepper. Serve with tortillas.

Rice Krispy Treats

Simple yet delicious

-3 TBLS Butter
-4 cups mini marshmallows
-6 cups rice krispies

Melt butter and marshmallows together over medium heat. Pull off heat, mix with rice krispies. Spray 9x13 pan with Pam, dump in...you're done!

SUGAR-FREE PUMPKIN COOKIES

1/2 c. corn oil
2 eggs
Sugar substitute to equal 1 c. sugar
2 c. flour
1 tsp. salt
1 tsp. nutmeg
1 c. pumpkin
2 1/2 tsp. cinnamon
1/2 tsp. ginger
1 tsp. baking soda
1 c. raisins
1 c. nutmeats

Beat oil and eggs until well emulsified. Add sugar substitute and beat until fluffy. Add pumpkin, then the dry ingredients. Add raisins and nuts. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees for 15-20 minutes.

Makes 3 dozen.

Chicken Tacos

This was given to me by Dean's sister. I'm soo glad she did!

1 cup chopped onion
1 clove garlic, minced
2 cups cooked chicken (I like shredded)
1 8 oz can tomato sauce
1 4 oz can diced green chili peppers, drained
1/2 tsp chili powder
1/4 tsp cumin powder
taco shells-hard or soft
lettuce
chopped tomatoes
shredded cheese

Coat an unheated large skillet with nonstick cooking spray. Preheat skillet over medium heat. Add onion and garlic to hot skillet; cook about 5 minutes or until onion is tender, stirring occasionally.

Stir in chicken, tomato sauce, chili peppers, chili powder and ground cumin. Cook and stir until headed through.

Serve up chicken mixture on taco shells, add desired toppings.

*To warm tortillas, preheat oven to 350 degrees. Wrap tortillas tightly in foil; bake for 5 to 8 minutes. Or wrap tortillas in microwave-safe paper towels for 20 to 30 seconds.


Enjoy!! We sure did. All of us loved this- even the leftovers.

Teriyaki Chicken & Broccoli

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
1 1/2 cups water
1/3 cup lite teriyaki sauce
1/2 tsp. garlic powder
2 cups MINUTE® Brown Rice, uncooked
2 cups frozen broccoli florets
1/2 cup salted peanuts (optional)

Directions:
HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 to 7 minutes or until cooked through.
ADD water, teriyaki sauce and garlic powder; stir. Bring to boil.
STIR in rice, broccoli and peanuts, if desired; cover. Cook on low heat 5 minutes. Remove from heat. Let stand 5 minutes. Fluff with fork.


On the back of MinuteRice brown rice. Delicious and easy!

Amy's Famous Artichoke Dip

I don't remember where my family got this recipe, or why I'm always the one to make it. But everyone loves this dip! It is great for large gatherings. These are not exact measurements, because I've never measured exactly, and I don't believe in it with this recipe.

1/2 Costco jar of artichoke hears (chopped into small bite size)
1/2 jar Kraft Lite Mayo (Or the Olive Oil Mayo, just make sure it's Kraft)
1/2 jar Parmesan cheese
1 tsp chopped garlic (I like the fresh kind from a jar, but dried works too)

Mix it all together except a small amount of cheese. Dish into 9 x 13 inch glass pan. Sprinkle light layer of Parmesan cheese on top. Cook for about an hour at 350 degrees.

If you need lots, use the entire jar of each ingredient and double the garlic. Use (2) 9 x 13 inch pans.

Serve with Ritz crackers or tortilla chips.
